Ingredients

  • 2 lb sweet potatoes peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp pure maple syrup

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Toss the sweet potatoes with the olive oil, salt, and pepper in a large bowl.
  3. Spread the potatoes in a single layer on a rimmed 18x13-inch baking sheet.
  4. Roast for 20 minutes.
  5. Turn the potatoes.
  6. Drizzle with the maple syrup and toss to coat.
  7. Roast for 10 to 15 minutes more, until the potatoes are fork-tender and browned at the edges.

Notes

For even browning, spread the potatoes in a single layer without crowding the baking sheet. Refrigerate leftovers for up to 4 days; freezer-friendly. Avocado oil can replace the olive oil if needed.
