Method
Cook and season the beef
- Brown ground beef in a skillet over medium-high heat, breaking it up, 5–6 minutes until no longer pink; drain excess fat for a cleaner finish.
- Add taco seasoning and water to the beef, then stir and simmer 2–3 minutes until thickened and well coated, stirring until the mixture looks glossy.
Make the cheese wraps
- Sprinkle 1 cup mozzarella into a thin, even 8-inch circle in a nonstick skillet over medium heat, cooking 3–4 minutes until melted, golden, and set.
- Carefully transfer the finished cheese wrap to parchment paper, letting it rest just long enough to firm before repeating with the second wrap.
Assemble and crisp
- While the cheese wrap is still warm and pliable, layer the center with seasoned beef, crushed pork rinds, and cheddar cheese.
- Spoon sour cream mixed with hot sauce over the fillings so it spreads slightly, creating a creamy layer.
- Add lettuce, diced tomato, pickled jalapeños, and chopped cilantro on top, packing lightly so the wrap can still fold.
- Fold the edges of the cheese wrap up and over the filling toward the center, pleating as you go to fully enclose it, pressing gently to seal.
- Place the folded crunchwrap seam-side down in a hot, lightly oiled skillet and cook 2–3 minutes per side until golden and crisp, with the internal temp of the beef holding above 140°F.
- Let rest 1 minute, then slice in half and serve immediately while the cheese shell is crisp.
Notes
For best foldability, assemble as soon as each mozzarella wrap is set but still warm—if it cools too far, gently re-warm in the skillet for a few seconds. Store leftovers covered in the fridge up to 3 days; reheat in a skillet for the crispest results (microwave will soften). Freezing is not recommended because the cheese shell can lose its crunch. For a dairy-light swap, use a low-moisture mozzarella alternative that melts well; the texture depends on meltable cheese.
