Ingredients

  • 1.5 lb Brussels sprouts trimmed and halved
  • 1 tbsp olive oil
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper
  • 6 oz bacon cut into 1/2-inch pieces

Equipment

  • 1 rimmed 18x13-inch baking sheet
  • 1 12-inch skillet

Method

  1. Heat the oven to 425°F.
  2. Toss the Brussels sprouts with the olive oil, kosher salt, and black pepper on a rimmed 18x13-inch baking sheet.
  3. Arrange the sprouts cut side down.
  4. Roast for 20 to 25 minutes, turning the sprouts once halfway through, until browned and tender.
  5. While the sprouts roast, cook the bacon in a 12-inch skillet over medium heat for 8 to 12 minutes, stirring occasionally, until crisp.
  6. Transfer the bacon to a paper towel-lined plate.
  7. Toss the crispy bacon with the roasted Brussels sprouts and serve hot.

Notes

For the best browning, dry the Brussels sprouts thoroughly before tossing with oil. Refrigerate leftovers for up to 3 days; freezing is not recommended because the sprouts soften. For a pork-free swap, use turkey bacon.
