Ingredients

  • 1 Nonstick cooking spray for the pan
  • 1 puff pastry sheet; about 8 ounces; frozen, thawed but still cold
  • 6 oz Brie cheese cut into 24 small pieces
  • 0.33 cup cranberry sauce whole-berry
  • 0.25 cup pecans finely chopped

Equipment

  • 1 24-cup mini muffin pan

Method

  1. Heat the oven to 375°F.
  2. Coat a 24-cup mini muffin pan with nonstick cooking spray.
  3. On a sheet of parchment paper, roll the puff pastry into a 12x8-inch rectangle.
  4. Cut the pastry into 24 2-inch squares and press one square into each muffin cup.
  5. Put one piece of Brie in each pastry cup.
  6. Top each with 1 teaspoon cranberry sauce and about 1/2 teaspoon pecans.
  7. Bake for 15 to 18 minutes, until the pastry is puffed and golden and the Brie is melted.
  8. Let the bites rest in the pan for 5 minutes.
  9. Remove the bites and serve warm.

Notes

Keep the puff pastry cold while working for easier handling. Store leftovers in the refrigerator for up to 3 days; freeze baked bites for up to 2 months and reheat until warm. For a nut-free version, omit the pecans.
